Soft strawberry muffins perfect for lunchboxes and teatime


These soft strawberry muffins bring together fresh strawberries and Henties Strawberry Milk for a sweet homemade treat the whole family will love. Perfect for school lunchboxes, weekend baking or afternoon tea, they’re easy to make and even better served warm from the oven. 

Recipe Snapshot

Ingredients

  • 1¾ cups all-purpose flour 
  • ½ cup sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 1 cup Henties Strawberry Milk 
  • 1 egg
  • cup sunflower oil or melted butter 
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries

Method

  1. Preheat the oven to 180°C and prepare a muffin tray. 
  2. Combine the flour, sugar, baking powder and salt in a bowl. 
  3. In a separate bowl, whisk together the strawberry milk, egg, oil and vanilla. 
  4. Fold the wet ingredients into the dry ingredients until just combined. 
  5. Fold in the chopped strawberries. 
  6. Spoon the batter into muffin cups and top with extra strawberries if desired. 
  7. Bake for 20 to 25 minutes or until cooked through. 
  8. Allow to cool slightly before serving.  

Tips

  • Sprinkle sugar on top before baking for extra sweetness.
  • Add a swirl of cream cheese for a richer muffin.
  • Serve warm with butter for a comforting treat.
